Candied Grapefruit Peel

to Make Citrus Roses
This
garnish will make any dish more festive. To make a citrus rose, start
peeling a medium size orange from the top with a sharp paring knife.
Cut a continuous strip of peel about 3/4 inch wide in spiral fashion.
Curl the strip, peel side out, into a rose shape. Secure it at the
base with a toothpick. Trim the base (and toothpick) if necessary
so it will sit flat. Use with mint or young tender orange leaves if
desired.
Making Candied
Grapefruit Peel
Remove
the yellow part of the peel of one grapefruit with a vegetable peeler.
Cut into 1/16-inch -wide strips. In a small saucepan, combine 3/4
cup sugar, 1/2 cup water and peel. Bring mixture to a boil; reduce
heat, cover and simmer for 15 minutes. Drain the grapefruit peel and
spread it on wax paper. Cool 10 minutes, sprinkle with 3 TABLESP granulated
sugar, toss to coat completely. Let peel dry overnight.
